If I had to eat one type of food forever, it would be soup! It’s so versatile and can give so many different flavor profiles. Not only that, but it’s chock full of nutrients. It’s an easy way to get us closer to our daily goal of 5-9 cups of vegetables and it helps us with variety! Our gut health thrives when we eat more than 30 different types of fruits and vegetables every week. So basically, soup is pure genius and I’m here for it.

Soup is also one of the most comforting foods and the easiest food to make! It’s ideal for when we need to feed lots of people, have little time, or need to plan ahead.  In just ten minutes, you can prepare this rich, savory Homemade Pho Bowl. And I promise this White Chicken Green Chili is worth the wait.
