Sweet and juicy strawberries with crunchy raw walnuts and creamy chevre on citrus sesame spinach.
This salad is incredibly easy to make and great for summer evenings. It pairs best with a simply marinated flank steak or grilled portabellos!
Strawberry Spinach Salad Ingredients
With super simple salads, the key is fresh high quality ingredients. The flavors of the vegetables and fruits really make the salad so the fresher the better. Sweet ripe strawberries will really shine in this salad!
Substitutions
If you avoid nuts, you can omit or replace the walnuts. The crunch really adds to the salad so i’d recommend replacing with toasted sunflower seeds.
Making the Salad
First mix the dressing
Put the tahini in the bowl and juice the lime into the bowl. Grind some of the lime rind into the bowl and one to two grinds of himalayan sea salt. Whisk with a fork and add a little bit of water to thin it out.

Next toss in the spinach and some strawberries
Evenly coat the spinach in your newly mixed tahini lime dressing.
Slice the berries and mix half into the spinach, reserving half for the top
We eat with our eyes first, so some of the sliced strawberries will go on top with the chevre and walnuts. However, there are too many strawberries to put all of them on top.
For that reason, mix half of the strawberry slices into the spinach and then reserve the rest of the slices to spread on top of the salad.
Then top the salad!
Top the salad with remaining strawberry slices, crumbled walnuts and chunks of chevre.

This salad is fresh and light yet creamy and satisfying. It pairs really excellently with grilled flank steak!

Wash spinach and cut into bite-size pieces, about 1 to 1.5 inches long

In a large salad bowl, mix tahini with juice of the half lime. Grind some of the lime rind and a few grinds of Himalayan sea salt and mix together. If the dressing is too thick, add a little water to thin it out

Toss spinach in dressing

Slice strawberries and add just over half of them to the salad. Toss to combine.

Top salad with remaining strawberry slices, chevre chunks, and walnuts
