I don’t know about you, but I need some serious light eats to recover from the long weekend of over eating! And I’m not quite ready for pumpkins like the rest of the world. I see fall as an opportunity to clean things back up after they might have lapsed a little bit towards the end of the summer (ok, ok – 100% lapsed – no mights about it – but it was summer! and there were bar-b-ques! :-/). And even though it is officially fall and I can get excited about delicious winter soups, I still crave those juicy fresh fruits from the farmers market, flavorful garden herbs and fresh crisp veggies. So, what’s a girl to do but combine all of these things into one stunner salad stacker?! I mean, I guess I could have just thrown them all into a bowl like a regular salad, but this just seemed more fun and elegant. The best part? -> it was quicker to prepare than a typical salad because there was less dicing, slicing and chopping! So it’s a win-win for me and a perfect match for this week as I get back to work and get on with my typical busy schedule.

Peach Tomato Mint Salad Stacks

Instructions

Slice the peach and tomato into 1/2-1" slices.

Stack peach, cuke, tomato, peach, cuke, tomato.

Drizzle with oil and salt and pepper. garnish with fresh mint leaves.
