Cake:

1. Sweet potatoes, 2 small cubes and baked (optional baking- only did about 7 min)

2. Remove and mix in zest and yolks
3. Fold in meringue till well blended
4. Pour into 2 square Pyrex baking pans.
5. Put I. Preheated oven at 350 for 20 minutes

Glaze:

1. coconut milk, a liquidy part from the bottom of the can- reserve cream for whipped cream., 3/4 cup - mixed in slowly 

Coconut whip cream:

1. Cream from 3 cans coconut, whipped with 1/2 tsp vanilla and 1/2 tsp honey
