Important pre-morning prep: (if I hadn’t done this prep the night before it might not have gone so smoothly)
- cut the sweet potato and coat with oil and salt on the baking sheet so it is ready to just pop in the oven
Here’s what I tried today:
- Put already prepped sweet potatoes in the oven
- Get eggs ready to bake
- Put eggs in the toaster oven to bake- check on sweet potatoes

Dice the potatoes into small 1/2 inch cubes and spread evenly on a baking sheet

Drizzle half the olive oil over the potatoes, then coat with a few grinds of fresh sea salt, about 1/4 tsp

Massage oil and salt into potatoes until everything is evenly coated

Place in fridge until ready

Pop into the oven at 350 degrees for 20-27 minutes (while doing something else with your morning!)

Spread the rest of the oil on bottom of the 4x5 baking dish

Break eggs into an oiled baking dish. Salt, pepper, and parsley to taste and preferred appearance of herbs.

When the potatoes only have 5-7 minutes left (about 20 minutes into their baking) turn the temp up to 400 on the oven and add the eggs.

Bake for about 7 minutes or until whites are solid

Add potatoes to the plate and finish with eggs

Maybe also treat yourself to a cup of coffee - decaf for me!
