Description

This thick and creamy smoothie bowl makes a great dessert or start to your day. It's loaded with hidden vegetables and fresh spice and rounded out with healthy fats to keep you full.

Ingredients
    Smoothie
  • 1/2 cup frozen zucchini
  • 1 cup frozen cauliflower
  • 1 cup pumpkin puree
  • 1/2 cup coconut milk
  • 1 tablespoon coconut butter
  • 2 scoops collagen (optional)
  • 4 large dates (soaked in hot water for 5-10 minutes)
  • 1 teaspoon maple syrup
  • 1 inch ginger root
  • 1 inch turmeric root
  • 1/2 tablespoon pumpkin pie spice
  • 2 dashes black pepper
  • Toppings
  • 4 tablespoons Roasted mixed nuts
  • 4 tablespoons Coconut flakes
  • 2 tablespoons Grain-Free Granola (optional)
  • 1 teaspoon Chia seeds (optional)
  • Freshly grated nutmeg (optional)
Instructions
  1. Place all smoothie ingredients in a blender on smoothie or puree mode or until all ingredients are smooth and of even consistency.

  2. Pour into a bowl and top with toppings
