Heart Mountain White Bean Stew

Ingredients
  • 3 cups Navy beans soaked sprouted and cooked
  • 4 Celery Stalks (Thinly Sliced)
  • 4 Thinly Sliced Baby Carrots
  • 1 Large Leek-Diced
  • 2 cups Water
  • 1 Chuck Roast
  • 1 teaspoon Salt
  • 1/4 teaspoon Cumin
  • 1/2 teaspoon Dried Rosemary
Instructions
  1. Put all ingredients in a pot and boil for 1 hr hours

  2. Add 1 Anaheim green pepper and 1 tomatillo, diced. Boil for another 1-2 hours

  3. Add cilantro and boil an additional 30 minutes

  4. 1/2 bushel cilantro, coarsely chopped

  5. Garnish diced green onions and reserved chopped cilantro

  6. Serve and enjoy
