This breakfast has everything you need to start the day on a healthy foot and nourish your gut health.
To manage blood sugar and hormones, it's good to start with a healthy dose of protein and fat.
To help the gut, you want fiber, phytonutrients, and live-active cultures.
Plus it's super simple and quick, making it great for an everyday breakfast. I haven't made a pop-tart in a million years, but my guess it takes the same amount of time to toast that as to make this deliciously nutrition breakfast.


First, you'll saute the greens in a little olive oil until they are slightly wilted. Do this on medium-high heat using a ceramic-coated pan.
Turn the heat down to medium-low low and add the eggs and hummus. Add a few grinds of salt and pepper if desired. You want to make sure the hummus blends in really well with the eggs. This makes them super creamy without the dairy.
Just before the eggs are done, stir in the kraut so it is evenly combined and warm.
The kraut is alive and raw, so we get certain benefits by leaving it less cooked, hence adding it at the end. If it ends up cooking the whole time with the eggs, it isn't the end of the world, because it has benefits even when cooked, but I try to reduce the heat for the kraut in this scramble.
Sauté greens in olive oil on medium high until wilted
Reduce heat to medium-low and mix in eggs and hummus, stirring while cooking. Add salt and pepper to preference

Just before done, add in kraut.
Serve and enjoy
