Apple Strudel Pancakes

There's something about waking up in the morning and making pancakes that make the work day feel like a weekend. I was in need of some serious breakfast and some procrastination this morning. I'm so glad I took the time to make these because now I am full and satisfied and ready to take on my day. And they even diverted my typical craving for coffee first thing in the morning. Win-Win.

These are easy to make but a little time-consuming because the apples have to cook down into a sauce. The good thing is they don't need much interaction. You can put the apples on with plenty of water and let them simmer as you get ready for the day, whatever that may hold for you.

Ingredients
  • 1 Apple
  • 1 teaspoon Cinnamon
  • 1 dash Nutmeg
  • 1/2 cup Water
  • 1 Banana (Small)
  • 1 Egg
  • 1 tablespoon Coconut Flour
  • Coconut Butter (a tiny bit for heating the pancakes (optional))
Instructions
  1. Core the apples and dice.

  2. Mix diced apple, cinnamon, nutmeg, and water in a small pan and place on high heat. stir occasionally and make sure there is still water. you may have to add water a couple of times if it boils off.

  3. Cook apples down until they become a nice chunky apple sauce, about 20 min.

  4. Meanwhile, mash the banana in a small bowl and add in egg.

  5. Add coconut flour and mix evenly.

  6. Heat skillet to medium-high heat and add a tiny bit of coconut butter so t doesn't stick. I used the prongs of my fork and dug out enough to cover 1/4 of the fork prongs.

  7. Pour the banana pancake batter in the skillet into two small cakes.

  8. Heat for about 5 minutes or until cooked mostly through. flip.

  9. Stack pancakes on a plate and top with fresh apple sauce.

  10. Serve and enjoy!
