Loaded Kale Salad Bowl w/ Roasted Sweet Potatoes and Broccolini

A winter-inspired salad is easy to prep ahead of time or make on the go. The Loaded Kale Salad Bowl is a great lunch for the office.

Tahini lime dressing

  • 1 tbsp Tahini
  • 1/2 lime
  • ½ tsp coconut aminos


  • ½ bunch kale curly
  • 1/2 cup roasted sweet potato fries
  • 2 heaping spoons Kimchi
  • 1/2 cup Roasted Broccolini
  • ½ avocado sliced
  • ¼ cucumber diced
  • 1/2 beet grated or spiralized


  • Squeeze lime into bowl, removing seeds. Mix in coconut aminos and tahini.
  • The dressing might seize at first, separating, but keep stirring and it will emulsify and become creamy and delicious
  • Wash and de-rib the kale before coarsely chopping
  • Add kale to bowl with dressing, and massage dressing into Kale
  • Top with other ingredients
  • Serve and enjoy!
