1 1/2cupscoarsely chopped red cabbageabout 1/3 head red cabbage
2tbspavocado oilcan substitute for olive oil
3stalks celerydiced
1/4cupjicamafinely diced
1/2cupfresh cilantro
3dashes powdered turmeric
3grinds fresh pepper
2pinchesof salt
1tspturmeric
1tbsplemon juice
2tbspwater
1head cauliflower4 cups
Instructions
Preheat oven to 450 degrees
Spread red cabbage evenly in baking pan
Mix celery, jicama, cilantro, 1 tbsp of the avocado oil, 1 pinch salt, 3 dashes pepper and 3 dashes turmeric together. Layer the mixture on top of cabbage
In mixing bowl, combine remaining 1 tbsp avocado oil, 1 tbsp lemon juice and 2 tbsps water with 2 tsp turmeric and a pinch of salt. Wisk together until evenly mixed.
Coarsely chop cauliflower and add to the bowl with turmeric mixture. Stir until cauliflower is evenly coated with the turmeric goodness
Layer turmeric cauliflower on top of celery mix in pan
Bake at 450 for 45 minutes
Serve and enjoy!
