Super Thick Pumpkin Pie Smoothie Bowl

This thick and creamy smoothie bowl makes a great dessert or start to your day. It's loaded with hidden vegetables and fresh spice and rounded out with healthy fats to keep you full.

Ingredients

Smoothie

  • 1/2 cup frozen zucchini
  • 1 cup frozen cauliflower
  • 1 cup pumpkin puree
  • 1/2 cup coconut milk
  • 1 tbsp coconut butter
  • 2 scoops collagen optional
  • 4 large dates soaked in hot water for 5-10 minutes
  • 1 tsp  maple syrup
  • 1 inch ginger root
  • 1 inch turmeric root
  • 1/2 tbsp pumpkin pie spice
  • 2 dashes black pepper

Toppings

  • 4 tbsp Roasted mixed nuts
  • 4 tbsp Coconut flakes
  • 2 tbsp Grain-Free Granola optional
  • 1 tsp Chia seeds optional
  • Freshly grated nutmeg optional

Instructions

  • Place all smoothie ingredients in a blender on smoothie or puree mode or until all ingredients are smooth and of even consistency.
  • Pour into a bowl and top with toppings
  • Serve and Enjoy!
